Recipe: Buttermilk-Berry-Muffins

muffins! makes 12 muffins. You’ll need:
  • 150g [1 cup] mixed frozen berries (strawberries, blueberries, blackberries, raspberries)
  • 280g [3 cups] flour
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 120g sugar
  • 2 large eggs
  • 250ml [1 cup/8 oz.] buttermilk
  • 90 g [1 stick] butter
  • 5 drops natural vanilla flavouring
  • powdered icing sugar to dust the finished muffins
  1. Melt the butter and let it cool.
  2. Whisk together flour, baking powder, salt and sugar.
  3. In a separate bowl, whisk together the eggs, buttermilk, melted butter and vanilla flavouring.
  4. Combine the wet and dry ingredients and add the berries to the mix.
  5. Fill muffin liners and bake for about 20 minutes at 400° F [~200° C].
  6. Before serving, dust the muffins with powdered icing sugar.
