
- 150g [1 cup] mixed frozen berries (strawberries, blueberries, blackberries, raspberries)
- 280g [3 cups] flour
- 3 teaspoons baking powder
- 1/8 teaspoon salt
- 120g sugar
- 2 large eggs
- 250ml [1 cup/8 oz.] buttermilk
- 90 g [1 stick] butter
- 5 drops natural vanilla flavouring
- powdered icing sugar to dust the finished muffins
- Melt the butter and let it cool.
- Whisk together flour, baking powder, salt and sugar.
- In a separate bowl, whisk together the eggs, buttermilk, melted butter and vanilla flavouring.
- Combine the wet and dry ingredients and add the berries to the mix.
- Fill muffin liners and bake for about 20 minutes at 400° F [~200° C].
- Before serving, dust the muffins with powdered icing sugar.
