Currant Crumble Cheesecake // Johannisbeer-Streusel-Käsekuchen

Now and then, I get a huge craving for cheesecake that can not be satisfied by any other kind of cake. When I had it the last time, I also saw these gorgeous currants in the most perfect shade of red and knew that I just had to combine the two. When I then found this recipe on chefkoch.de that also included yummy crumble, I realized it was meant to be. I tweaked the recipe a little and left out the alcohol and the marzipan, and the cake turned out sooo delicious. You really should try it! Von Zeit zu Zeit habe ich soo Lust auf Käsekuchen und kann durch keinerlei anderen Kuchen ruhig gestellt werden. Als es das letzte Mal soweit war, erblickte ich zudem noch diese wunderschönen Johannisbeeren im allerschönsten Rotton und wusste, dass ich das kombinieren musste. Dann entdeckte ich dieses Rezept auf chefkoch.de, das auch noch Streusel enthielt und mir wurde klar, dass ich es einfach backen musste. Ich habe es ein bisschen abgeändert und die Liköre und den Marzipan weggelassen – der Kuchen wurde aber auch so einfach unglaublich lecker.   • 300g flour
  • 1 1/2 tsp. baking powder
  • 150g sugar
  • 80g ground almonds
  • 200g butter
  • 1 pinch of salt
  • 1 package vanilla sugar
…for the filling:
  • 500g lowfat curd cheese
  • 1 package custard powder
  • 2 eggs
  • 120g confectioner’s sugar
  • zest of 1/2 lemon
  • 3 tbsp. currant juice
  • 200ml heavy cream
  • 300g red currants
  1. Mix all the ingredients for the crumble by hand.
  2. Press half of the crumble into a greased and flour-dusted baking form (20-26cm diameter) and form an edge (about 1 cm high).
  3. Now prepare the filling: Mix all the ingredients fot the filling but the heavy cream and the red currants, whip the cream until stiff and mix with the rest.
  4. Fill the filling into the baking form, place the red currants on top and cover with the remaining crumble.
  5. Bake at 180°C for 50 to 55 minutes. Afterwards, leave the cake in the oven for another 15 minutes. Let cool over night before removing the cake from the baking form.

  • 300g Mehl
  • 1 1/2 TL Backpulver
  • 150g Zucker
  • 80g gemahlene Mandeln
  • 200g Butter
  • 1 Prise Salz
  • 1 Päckchen Vanillezucker
…für die Füllung:
  • 500g Magerquark
  • 1 Packung Puddingpulver, Vanillegeschmack
  • 2 Eier
  • 120g Puderzucker
  • Schale einer halbe Zitrone
  • 3 EL Johannisbeersaft
  • 200ml Schlagsahne
  • 300g Johannisbeeren
  1. Die Zutaten für die Streusel von Hand verkneten.
  2. Die Hälfte der Streusel auf den Boden einer gefetteten, mit Mehl bestäubten Springform (20-26cm Durchmesser) drücken, dabei einen Rand von etwa einem cm formen.
  3. Nun die Füllung zubereiten: Alle Zutaten dafür, bis auf die Schlagsahne und die Johannisbeeren, verrühren, dann die Sahne steif schlagen und mit der Quarkmasse vermengen.
  4. Die Quarkmasse in die Springform füllen, die Johannisbeeren darauf verteilen und mit den restlichen Streuseln bedecken.
  5. Im vorgeheizten Backofen bei 180° Ober- und Unterhitze für 50 bis 55 Minuten backen. Anschließend den Kuchen noch für etwa 15 Minuten im Ofen lassen und über Nacht kühlen, bevor am nächsten Tag der Tortenring entfernt werden kann.

    Oh, wow.  I also love a good cheesecake (the famous NYC cheesecake bakery, Junior’s, is just a few blocks from me), but I seriously LOVE a crumble.  This?  Perfect.
