Insta-Recipes: Pumpkin Soup & Spekulatius Cupcakes

I love food, cooking and baking. Such a suprise, right? 😀 My Instagram Stream is full of pictures of food… and since some people were asking, I’m sharing some of the recipes here.
Ich liebe Essen, Kochen und Backen. Welch Überraschung, hm? 😀 Mein Instagram Stream ist dementsprechend voll von Essensbildern, und da immer mal Fragen kommen, poste ich nun ein paar der Rezepte hier.
Everyone has probably read billions of recipes for pumpkin soup by now… but it doesn’t stop me from sharing my own, because I liked it soo much! You’ll need [makes enough for two people and several days…]
  • one hokkaido pumpkin
  • about 15 small potatoes
  • about 10 carrots
  • spices and coconut milk to taste

Peel and slice the potatoes and carrots & slice the hokkaido pumpkin [no peeling here because you can eat the skin as well!]. Put into a pot and add enough water to just cover the ingredients. Cook for about 30 minutes, until everything is soft. Puree the soup and add coconut milk and spices [salt, pepper, curry, …] to taste.
Bestimmt habt ihr schon hunderte von Kürbissuppenrezepten gelesen… was mich nicht davon abhält, meines noch zu zeigen, denn es schmeckte so gut! Ihr braucht [reicht dann für zwei Leute und viele Tage…]
  • einen Hokkaido-Kürbis
  • etwa 15 kleine Kartoffeln
  • etwa 10 Karotten
  • Gewürze und Kokosmilch nach Geschmack

Die Kartoffeln und Karotten schälen und in Stücke schneiden & den Hokkaido Kürbis nur in Stücke schneiden [den muss man nicht schälen, weil man die Schale mitessen kann]. Alles in einen Kochtopf geben und so mit Wasser füllen, dass alles gerade so bedeckt ist. Etwa 30 Minuten kochen, bis alles schön weich ist. Jetzt die Suppe pürieren und Kokosmilch und Gewürze [Salz, Pfeffer, Curry, …] nach Geschmack hinzufügen.
Spekulatius or Speculoos is a kind of shortbread biscuit that’s mainly eaten here in Germany around Christmas season. I love it and when I found this recipe, I knew I had to try it even though christmas is still so far away! You’ll need [for 12 cupcakes]:
  • cinnamon
  • 1 cup soured cream
  • 80ml vegetable oil
  • 2 eggs
  • 250g flour
  • half a package of baking soda
  • 100g sugar
  • 12 tsp spekulatius-cream
  • 1/2 package of spekulatius spice
  • 250g mascarpone
  • 50g confectioner’s sugar
  • a handful of miniature spekulatius cookies

Line cupcake pans with paper liners. Mix soured cream, eggs, cinnamon and oil, then add sugar, flour and baking soda. Fill about half of the dough into the cupcake pans, add on teaspoon of spekulatius-cream to each and fill in the rest of the dough. Bake for 25 minutes at 180°C and let cool. Mix mascarpone with confectioner’s sugar and spekulatius spice, fill into piping bag and decorate the cupcakes with this and some miniature spekulatius cookies. Enjoy!
Hier erlag ich wohl einem Anflug von Weihnachtsvorfreude… Das Rezept habe ich von hier – am tollsten ist die versteckte Füllung. Als Spekulatiuscreme kann ich euch die von Rewe Feine Welt wirklich sehr ans Herz legen, die ist unglaublich lecker! Für das Topping habe ich einen Teil der Mascarpone durch Frischkäse ersetzt und aus Mangel an Spekulatiusgewürz Lebkuchengewürz verwendet. Beim nächsten Mal würde ich ein reines Frischkäsetopping verwenden, das schmeckt mir persönlich einfach viel besser! Lasst es euch schmecken!
