Welcome to the second edition of Katja & Katha: inspired. You can find the first edition and what it’s all about here. Today we’re creating recipes with . Read on to learn how to make Katja’s yummy spinach rolls and my mini spinach quiches! inspired: spinach Hello lovelies! So todays‘ recipe is all about spinach? Well….. I love baking. And I love cooking. But I love baking a teeny tiny bit more! So here’s what I made from spinach: Spinach rolls! This way I could cook a bit and bake a lot. Happy me! Here’s the recipe: For the dough:
  • 150 g curd cheese
  • 6 tablespoons vegetable oil
  • 6 table spoons sparkling table water
  • 300 g flour
  • 1 package baking powder
  • salt
For the filling:
  • 400 g leaf spinach
  • salt and pepper
  • 100 g feta cheese
First prepare the dough. Mix all the ingredients together and roll the dough on a floured surface. In a heat pan, heat 400 g spinach along with the spices. Let the whole thing cool completely aaaaaand remove the water from the spinach by using a sieve. Now cut the rolled out dough into straps, approximately 5 cm wide and 15 cm long. Distribute the filling on the dough plates and add some chopped feta cheese on top. Now roll the dough to form rolls. Cut 2 cm thick slices from your rolls and bake them for about 15 minutes at 170 °C. Happy baking (and cooking)! And thank you again, Katha, for having me <3 Loves, Katja -- maedchenmitherz I made these mini spinach quiches for Sven’s birthday party – they’re great finger food. Here’s what you’ll need: For the dough:
  • 500 g flour [I used wholemeal flour, that’s why my quiches are so dark]
  • 2 eggs
  • 4 tablespoons water
  • 6 tablespoons cream
  • 2 teaspoons salt
  • 200g cold butter
For the filling:
  • 450 g leaf spinach
  • 3 eggs
  • 150 g creme fraiche
  • salt, pepper and other spices to your liking
  • feta cheese
Now… Mix together all of the ingredients for the dough and put it in the fridge for 30 mins. In the meantime, cook the spinach with a little bit of water, and after it is cooler mix in the creme fraiche and the whisked eggs. Add some salt, pepper and spices if you like. Roll out the dough, cut out small circles [I just used a cup for this] and place them in a muffin baking tray. Fill them with the spinach-mixture and add a little bit of feta cheese to each mini quiche. Bake for about 20 minutes at 220° C. Did you join us?
